What the job is

You run the business that gets food, drink and supplies onto yachts. Chefs, chief stews and pursers send orders, often late at night, listing exact brands, cuts, organic produce and items from the owner's home country. Your team sources each item, prices it, checks quality and delivers it to the boat on the quay or at anchor. Sometimes that means a tender run in Cannes at 07:00. Sometimes it means a chilled pallet flown to Sardinia or St Barths.

You manage buyers, warehouse staff and drivers, and you hold the supplier relationships that make the job possible: fish markets, butchers, bakers, cheese affineurs, wine merchants and specialist importers. You keep the cold chain intact, with temperature logs and traceability on every chilled and frozen line. You handle the paperwork for duty-free ship's stores where a yacht qualifies, and for bonded alcohol and export documents. A missed form can hold an order on the dock.

Your clients are yacht chefs, pursers, captains and management companies. Many provisioning managers are former chefs or chief stews because they know what a good order looks like and how little time crew have. You also deal with quoting, invoicing, credit accounts and late payments. Summer in the Mediterranean and winter in the Caribbean or Florida are relentless, with weekend and early morning deliveries. Quieter months go on supplier deals, systems and winning new boats.

What makes a good one

  • Sourcing premium food and wine
  • Cold chain and food safety control
  • Supplier negotiation
  • Customs and ship's stores paperwork
  • Calm under late orders

A day in the life

A yacht tender crossing turquoise water
A July weekday at a provisioning company, Antibes
  1. 06:00Check the overnight inbox. Three chefs have sent orders since midnight, one for a 70m arriving in Monaco tonight with ten charter guests.
  2. 06:45In the warehouse, check the morning's fish and produce against orders. Reject a box of langoustines that is not good enough and call the supplier for a replacement.
  3. 07:30Vans leave for Port Vauban and Cannes. A tender collects one order at the quay because the yacht is anchored off the Croisette.
  4. 09:00Source the hard items: a specific Japanese whisky, Wagyu from a named farm and a gluten-free bread the principal likes. Confirm prices and send quotes to the chefs.
  5. 11:00Prepare customs paperwork for a non-EU flagged yacht leaving for Montenegro, so its wine and spirits order ships duty free.
  6. 13:00Call a chief stew on a 55m about flowers and guest amenities for tomorrow's charter and add them to the order.
  7. 15:00Arrange a chilled consignment to Bonifacio for a yacht that has moved on. Book the courier and check the temperature packaging.
  8. 17:00Review the day's invoices, chase two overdue accounts with a management company and update the stock list.
  9. 19:30Final check of the Monaco order loading. Brief the evening driver and keep the phone on for late changes.

Questions crew ask

Do I need to have worked on yachts?

It is not essential, but most hires have been a yacht chef, chief stew or purser, or have run purchasing for a top hotel or restaurant. Knowing how crew work and what owners expect is what wins and keeps accounts.

Is the job seasonal?

The role is permanent, but the workload follows the seasons. Summer in the Mediterranean and the winter Caribbean and Florida season are very busy, with early starts and weekend deliveries.

How is it different from provisioning on board?

On board you order for one yacht. Ashore you supply many yachts at once, manage staff and suppliers, handle customs and invoicing, and carry responsibility for the business's margins and reputation.
